This recipe is an old friend of ours. We’ve been making it over the years and serving it as a side dish with many of the main courses you’ll find here. If you like your food a little spicier you can spike this up with some poblano or jalapeno peppers.
Ingredients
Yield: 6-8 Servings
1 - lg yellow onion diced small
4- medium zucchini or yellow squash or 2 of each, diced medium
2 TBSP - chopped fresh garlic
kernels from 1 ear of sweet corn
3 - tomatoes roughly chopped
2 Cups - grated cheddar cheese
clarified butter or oil to coat pan
salt and pepper to taste
Instructions
Pre-heat oven to 350 degrees
In a large saute pan coated with clarified butter saute onions, garlic and squash for about 5 minutes, until fairly soft.
Fold in corn, tomatoes, cheese, salt and pepper and transfer to casserole dish.
