Cipollini are small Italian onions about silver dollar size to a little larger in circumference and about 2/3" of an inch thick. They are mild in flavor and this recipes makes an excellent side dish.
Ingredients
Yield: 20 Onions
20 - cipollinis, peeled
2 TBSP - brandy
1/2 Cup - veal stock
1/2 Cup - red wine
olive oil for sauteeing
Instructions
Saute the onions until well browned.
Flame with brandy.
Cover with veal stock and red wine.
Cover and braise until soft but not mushy. About 1/2 hour.
